My wife and I purchased a 2018 Colt Bullet. We've discovered, (at the storage facility,) that when on battery only, only the slide will work... No inside anything other than the slide works, zilch, nothing. Does this RV need to be constantly plugged into 30A Shore Power at all times and battery, when in use? If we aren't either plugged into an outlet or generator, are we simply stuck, Boondocking it?

There is enough parasitic draw on the battery under normal circumstances that not plugged into shore power or a solar panel the battery would be dead in a week or two. Since you appear to have enough juice to power the slide (a very heavy draw), it indicates that you may have a battery disconnect somewhere and it is in the disconnect position. Otherwise, interior and exterior lights, gas leak detector, bath vent fan, etc would all work
 
If there's a disconnect, we can't find it...we've been looking and looking for something, anything...
Where might I find it and...what might it look like?

On a 2018 model the first suspect should be the auto reset breakers which were located on the battery side of the tongue. Probably a 50 amp then a 40 amp one and then a 30 amp one. The slide probably works off of the 50 and a working slide shows that the 50 is ok. They are daisy chained on the positive side so you need to test the output side and not the input side. The breakers are meant to be in a protected environment so of course they are mounted outside.
Replace the faulty one with a true weatherproof one but beware that most of the better replacement breakers will require you to put new terminals on the wires as the terminals are 1/4" and not #10. Also, replace the 1/4-28 nut with a stainless one as the breakers have stainless studs but supply plated nuts.
If it is the breaker, open it up after the project is done and you will find a pile of rust particles where the parts used to be.
