No hot water
I need help with a water heater problem. The gas burner will come on once and won't cycle.

How old is the water heater?
First thing is a good cleaning including the entire combustion chamber and flue. If you have the owners manual on the water heater, it should have maintenance and cleaning instructions.
You also want to make sure you have enough propane and adequate pressure at the heater. Most folks don't have the equipment to check pressure, but if the other appliances function normally on gas it's probably OK unless there is a kink or other damage to the line to the fridge. If you gave it a proper cleaning first, that would insure that the air tube and nozzle are already clear.

If it comes one once, lights, and goes out shortly, it's likely that the flame isn't being detected and it's trying to prevent a gas leak. Typically the sensor to detect flame is in the ignitor and a simple reposition of will do the trick... Can you pull the cover and see where it's being lit? Make sure that sensor/ignitor is dead center in the flame...
And yea, it should work on electric. Our electric switch is on the outside of the unit, inside the WH panel.

Thermistors prevent the gas from flowing if the flame is not detected after ignition. This is where I'd start. Reasonably cheap fix.

What make and model is your water heater? The service manuals for both Suburban and Atwood are online. They include the troubleshooting and alignment of the igniter sense wire if it is a electronic ignition. If older with manual gas control then the thermocouple is the problem.

My Atwood water heater had a similar symptom. I adjusted the position and then replaced the sensor/ignitor, but that did not resolve the problem. Changing the circuit board took care of the issue in my situation.

The way you explained your problem, it could be interpreted that the flame ignites "momentarily" and then goes out and won't reignite or it could be interpreted that the flame ignites and after the water is heated, it shuts off (as it should) but will not reignite once the water cools or is used.
The information in previous posts is good advice for the first issue, but if your heater is heating water, but not igniting once the water is used, it could also be a problem with the thermostat/high temp limit switch. If the thermostat is not functioning, the heater will continue to heat water until the high temp limit switch shuts off the flame, then, the water never "cools sufficiently" to reset the limit switch, so the thermostat will never call for a 'reignition"....
Just which problem are you having? or is there possibly another issue that's not been discussed?
