wiring in a UV water filter
hello-
I am in the process of upgrading with a Acuva uv water filter https://acuvatech.com/product/acuva-arrowmax-2-0/
and want to have/install another outlet under the sink so that I will not have to have the wall plug take up one the preinstalled ones
what would be the best (most practical) way to make this happen

It looks like your shore power connection to the power center is under the two drawers in the galley lower cabinet (between the stove and the sink). You can check for an open space in the AC power panel, if there's an empty space, just add a circuit breaker and use ROMEX to run from there to the "under sink space" which is directly next to it.
If there is no empty circuit breaker space, determine which circuit you want to tap into, then with the power center pulled out of the cabinet, cut the ROMEX from your selected circuit breaker, install a junction box and tap into the ROMEX. Mount that junction box in a safe place behind the power distribution center, run the new filter wire through the panel and reinstall the power center back where it was located...
BE SURE THAT THE TRAILER IS UNPLUGGED FROM SHORE POWER (and from the batteries) BEFORE STARTING !!!!

this is what I had initially thought but really wanted to make sure that I was in the right bALLpark on thinking and not setting myself up for failure or a disaster

The other option would be to replace a full specs breaker with a half space breaker of the correct amperage, also make sure you use the correct gauge wire. Personally all of our kitchen outlets are GFCI protected.

Curious, do you install another 'water faucet' at the sink or are you plumbing your kitchen sink to this?

this is to be an additional tap at the sink -
the logistics of hooking up the existing faucet are more that i care to deal with-

update on the project
actually turned out not to be that bad after all-
one I lulled the wfco out and looked at the neutral buss bar
it all made sense in adding in the 12v circuit in the open accessory space.

So are you using the 120V or 12VDC option on the UV unit?

12v hookup
went with the 12v hook-up so we would be able to have the filtered water even when we are boondocking-
was a much easier to do so than the 110 breaker set up

I agree. I was a bit confused for a moment. John was talking about adding a breaker to the panel and I saw the 12V option, thought to myself… “12V seems better.”

I interpreted that to say he wanted to install an outlet under the sink, so he didn't have to use an existing outlet and that he had already purchased the 120 VAC system (since he said he was in the process of installing)... That's why I posted my recommendations for "installing an additional outlet either with or without an additional circuit breaker"...

Yep, I understand John and read your previous post several times, right there with you on this - I just didn't get all my thoughts out at that moment of my other reply. What confused me was the specs on the system when I looked it up being A/C or D/C and his statement of outlets and wall plugs. The 12V route was a simpler system to me.

a clarification on my end
I see that maybe my explanation was a bit muddled
in wiring up the system - I decided to go 12v instead of the plugin with transformer-
I just cut out the transformer and wired it up to the 12v panel-
- wanted to be able to have the system working when boon docking in addition to being hooked up to shore power
