Electrical layout in RV
Can anyone recommend some good reference material that will educate me on the electrical system in the RV?
Something that will answer questions regarding what electrical stuff will work when boondocking.

There isn't any written material specific to your request that I know of. Here's what I know:
WILL WORK: all interior lights, furnace, radio. Refer control panel so you can operate the refer on LP. Water pump, vent fans. Water heater on propane. Stabilizer jacks and landing gear/tongue jack.
WONT WORK: A/C and fan, TV's, and refer on AC. Also the water heater on electric.

When not plugged in here's what will work:
Stove (propane)
Refrigerator (propane)
Lights (12 volt from battery(s)
Furnace (12 volt for blower/propane for heat)
Television provided it's a 12v TV
Stereo
Water pump
Slides
Power awning
Power jack
Here's what won't work:
Microwave
Television if it's plugged in to a traditional receptacle
All AC (home type) receptacles
Converter (the device used to provide 12V to trailer when plugged in)
Air conditioner
Can't think of any other things right now but that covers the majority. Now having said that, with the number of things listed that will work when boodocking keep in mind that the more things you use the shorter your battery life. and without something to recharge them (generator, solar panels) your pretty much done camping when the batteries are dead unless you are practicing survivalist skills.

Although I plug in when I camp, the battery will only last about 24 hours if not over used so conserve as much as possible.

Your SLIDE-OUT(s) also requires a 12 volt battery to open/close too...
On edit -- Oops, sorry BulletOwner1, I missed "slides" on your list when reading it.

Piggy backing this electrical question .....
How can I tell what fuze my outside rear outlets would be labelled or piggy backed?
In my "water-room" I have an outside double plug - If I wanted to run some outside items off that I would want to know if it's dedicated or not. Is there anyway to find this out?

Outside 120VAC outlet will be on a breaker not a fuse and should be the one labeled GCFI.
It will be piggybacked on that circuit with the reset receptacle usually located in the bathroom.
