Don't give me no sweet yankee cornbread.
Martha White mix, not Jiffy. Cut the milk recipe by 1/3 so that you have to spoon it into that hot cast iron skillet and spread it with a spoon.

Ha! Growing up mom made cornbread all the time, it never had sugar as we were from TX. I thought that was just the way cornbread was made. I learned to make it from her as I grew up (I love to cook) and DW (I married young) learned from her as well. She did say it didn't taste like her mom made because her mom's was sweet (from PA).

It was quite some time before I ate some of her mom's cornbread, and like above, it tasted more like "cake" to me than cornbread. Now, after being married almost 55 years, they are 2 separate concoctions used for different things. When we go to FL I make cornbread from scratch as everything there (Jiffy IIRC) is sweet. But, we like sweet depending on what I'm going to make. So yeah, the cornbread world have differing "concoctions". I would in no way make my jalapeno cornbread with sweet cornbread.

I like "coarse" cornbread, not cornbread like a birthday cake. Also a good crispy crust. Should sizzle a little when you spoon it in that hot cast iron skillet.

Big fan of the Martha White cornbreads.
i like making it from scratch, but so much easier to grab some off the shelf, specially for the camper.

I like Krusteaz mix for lots of stuff. Use a can of creamed corn instead of water.

White or yellow, coarse or smooth, DW always uses an extra egg and 2 small chopped jalapeños. And most important? Eat whatever you like best! There is no correct corn bread recipe. That would be like a 'correct fruit salad!'
