"I am leaving my grey tanks open at the moment. I suspect this will not be a problem because all the sinks and shower have P traps under them."

The problem besides insects is that there will be settling of solids that occur when you leave it open on the gray tank. Gray water has solids (food particles, soap, hair, etc. and keeping a "dry tank" there's insufficient water flow to flush it out. If I had a washing machine I would open that drain until the load was completed and then close it .

Dave I think you have said you have now found 4 dump valve handles. Is that correct? The video mentions 3 but on that middle drain the little valve handle only opens that 1 1/2' line. There should be another for that black line....you found that under the slide right? If so, and we ignore that very back drain line for the washer you would be set up right; 2 gray tank pull handles and the one black; kitchen gray, bathroom gray, bathroom black...then the washer tank.

I wouldn't leave those gray valves open, too much settling of "goo" in the tank and your drain lines. Also only open your washer drain when you are washing as Marshall mentioned. When we dump I leave the main gray open so DW can wash clothes and when she is finished I close it again.

When you get set up with Ts, Ys, Ss and whatever else you're going to have to have to connect those umpteen gillion dump valves post a pic - I'm envisioning an octopus. Might use some different colored ones to sort of brighten things up. You know you can get them in orange/brown, yellow, teal green/gray and I don't remember what all. I suspect you might even get some visitors wanting to see your creation....

Whether you leave the grey valves open or not I'd recommend getting in the habit of always forming a P trap in your drain hose to help keeping critters where they should be & much less chance of odors.
