Don't know if you're new to RV camping or well seasoned, so don't know if you know this. These absorption refrigerators take a long time to cool the fridge. Like all day or overnight, and even longer if ambient temp outside is over 90. How long has it been on? Do you have an IR thermometer, if so what temp do you get pointing it on the cooling fins?
If the freezer is properly cold then I would say the fridge is properly chilling. You noted the thermistor is at the top hight on the fin, that's where it needs to be. You might take a look at the other end of the thermistor wire, where it plugs into the circuit board on the back of the fridge (under the black plastic cover).
Don't load anything into the fridge until it gets cold. And don't have anything warm in the fridge while it's trying to get cold.
