You should have a 240 volt reading between the two poles of the 50 amp breaker. When you said you had 240 volts, I didn't understand that you had measured each leg as having 120 volts, then adding (not measuring) the two 120 volt legs to declare you measured 240 volts. So, let's start this again, do you have 240 volts present at the panel INSIDE the camper's electrical panel by taking a measurement between the 2 screws holding the wires to the 2 pole 50 amp breaker?? Did you measure the voltage from ONE of the 50 amp breaker's screws to ground?? What was the result of each of those test?? Do you have a transfer switch anywhere between the shore power entrance to the camper and the 50 amp breaker?? Seems unlikely mice could have chewed through a 6/3 with ground cable. Because you describe an intermittent electrical connection, you should be looking for a problem at all terminal connections.
