The pump will only run if it has somewhere to pump the liquid to. Once the spigots are closed the pump will run long enough for the pressure switch in the pump to shut it shut it off.
If you are getting "spurting" and "spitting" then you are sucking in air and loosing the prime.
As for using 5 gal, if you did not turn the valve to bypass the water heater then you are going to fill it (either 6, or 12 gallons) before it will build up pressure. If that's the case, I'd suggest you stop, drain and flush the hot water tank and start over. The antifreeze is corrosive to the metal in the tank and should not remain in it.
