If the smell is strongest "INSIDE" the medicine cabinet and the closets, then it's likely from those areas not "airing out with the doors always closed". You might try opening those doors when the trailer is in storage and when those spaces are empty. You might also try spraying some vinegar solution (1 cup white vinegar/4 cups water) very lightly on the surfaces in those cabinets. Let it dry with the doors open.
Almost all of Keystone's "wood paneling" is actually vinyl coated luan or MDF. Those products are manufactured using formaldehyde, it does dissipate over time, but inside a closed space like your closets, it can linger for years if they are always closed.
Air them out by storing the trailer with all those doors open and it the smell should go away over time.
