Chuckster, have you seen these tables installed without backing in the wall? I know it's possible that something was missed in assembly but I can't imagine that that system would have been designed/engineered without wood or aluminum stud backing to carry that table. Just bouncing down the road will cause that mounting to fail.
If there is backing and the screw is just stripped then the bamboo might re-secure the attachment. I might be tempted to use an aggressive wall anchor to better engage the backing material.
Anyway, just thinking out loud.
