Fresh water capacity in 295RL

The Keystone website says the fresh water tank is 87 gallons.
The first time we filled it up we made the newbie mistake of going too full and it ran over under the RV.
So we bought a flow meter, attached it to the hose and monitored the fill up next time. We had previously fully drained the black, grey and fresh water tanks (although I'm not sure if the hot water heater was drained as I'm not sure if there is a drain for that).
While filling, the convenience center said full at about 61 gallons, and then started overflowing under the RV at 65. Which means that about 62-63 gallons it was full. If the hotwater heater counts against the 87 gallons and it was full also, that adds 12 gallons for a total of 75?

Question is really how does it hold 87 gallons?
It would be great if it read
-Fresh water tank 65 gallons (with hot water bypass on)
-Hot water tank 12 gallons (77 total gallons)

The 87 gallons is the size of the tank. The tanks in RVs are very flat so when it starts to overflow can depend on many things, where is the overflow vent, is the rv level, is the tank installed level? A lot of variables that can come into play. When you’re dealing with a tank that is typically around 8-10” deep.

BTW, only drain for the water heater should be on the water heater itself. Remove the water heater exhaust cover and you’ll see it at the bottom. Could be an anode rod or plastic plug. I believe they’re a 1 1/16” socket. You said it’s 12 gallon so I’m assuming it’s not on demand.
