Lot of truth in that. I grew up on a lot of Cajun food and just plain old country cooking from a big garden.
What is a lutefisk? Similar to those Welsh miner tacos/taquitos?
FYI…Louisiana does tamales pretty good. The Zwolle Tamale Festival.

From allrecipes.com “ This is a Scandinavian dish. Lutefisk is cod that was was traditionally dried for storage through the winter. Then when it was time to use it, it was soaked in a mixture of lye and water which rehydrated and softened it. The texture is like Jell-O® and will fall apart easily so it needs to be handled carefully. It is an odd food for sure, fish-flavored Jell-O®, so don't be too critical. Some people love it, others will hate it. ”
When I was 13 at my first deer camp my uncle told everyone I wasn’t a man until I ate this trash. I told him he wasn’t a man until he drank his coffee black. Laughs all around. I still haven’t eaten it.

There's a lot of things, not only foods, that were born out of necessity and evolvved into a tradition.. Some folks eat rodents, some eat insects, or snakes, or fermented fish & eggs. I choose not to, not despariging those that do, It's just not my liking. BTW, wine, beer and spirits were originaly a way of providing drink when local water sources were often not potable. Now that's a tradition I can enjoy!

We just watched a segment on Cooks Country PBS about salted cod.
Betty thinks it might work in Courtbillion.
I’m not so sure.

I will always remember my Grandpa crumbling up cornbread in a beer mug and topping it off with buttermilk. And, that was all that beer mug was used for. He was a Baptist Deacon.
Betty has that cornbread cookin all figured out. Martha White mix, not that Jiffy mix full of sugar. Use only half or less of the water called for in the mix. A very hot cast iron skillet with a 1/4” of oil in it. Pour the mix in with help from a spoon. It should sizzle when it hits the oil.
We watch a lot of cooking shows. I think it was Cooks Country, again, that had a segment on lard vs vegetable oil and health issues. It was a tie. Surprised us.

Walking down the dairy isle I grabbed 2 lbs. of butter and put it in the cart. My DW (a nurse) took it out and replaced it with margarine. When I inquired why she said " substituting margarine for butter could extend your life by 10 years." I replied " It's your choice, do you want to live with a miserable SOB for an extra 10 years or a happily married man for 10 years less?". She grabbed the butter and has bought butter now for 43 years. I knew I married a smart woman!

If there is a Publix near, they have a good assortment of sides that just need to be warmed up. (they are pretty good to)
