Pellet Smokers and....EGGS??
We visit from time to time about cooking gear, recipes etc. on here and they are all enjoyable. Some probably know that I like to cook and carry a GMG pellet smoker with me. I cook most normal things but the other day I saw a little blurb on "the net" about smoking eggs! The reviews said they were wonderful and full of flavor blah, blah, blah so since I like boiled eggs decided to give it a whirl.....don't.
Spent 2 hours fiddling with the things (6) and they looked nice and smoky when I pulled them but that was the end of it. No smoky flavor to the eggs whatsoever AND the whites were kind of "icky" vs a boiled egg. Thought they weren't done but the yolks were way done. So that's not a keeper and just an fyi.
Another malfunction on my part; I cooked 6 and threw 2 out. Hated to look at those other 4 eggs and throw them out too. Decided to squash them and make egg salad for a sandwich - don't. By the time I mashed the eggs they looked somewhere between a wet tapioca pudding and snot. Went ahead and threw in a little mayo and other items to try to help it out. Toasted my bread really crispy and proceeded to eat it all so I wouldn't waste it - don't. Didn't really think about the "after consequences" of hogging all that down but needless to say it won't happen again. I'll just be sticking with my regular boiled eggs done in 15 minutes or less....and edible. Have a great day all.

If you have not yet "smoked baked potatoes", give them a try. Just clean the potatoes, put a little olive oil or butter on the skins and put them on the grill. Smoke them until tender and ready to eat... Unlike eggs, they WILL have that sweet aroma and smoked flavor...
Some smile at doing this with yams or sweet potatoes, some frown, saying the flavor is too "complex" (whatever that is supposed to mean). To me, the cinnamon kills the "complexity" anyway ROFL

Ummm, Danny? I’m not sure what else to say other than I greatly admire your dedication to the whole issue (experiment?) and not wanting to toss everything. But, I cannot believe you actually ate those when the whites were as you described. I think that is living somewhere on the edge of salmonella. And I swear I will never have my hubby do the same with his smoker, even when we are overrun with oodles of eggs from my chickens this summer.

About the only non traditional food we cook on the pellet grill is take and bake pizza, and English muffin pizzas.

You know Lynette I haven't figured what happened to those things. The yolks were plenty done and the whites looked like they had been done (thoroughly cooked plus the yolks were as well). Best I can figure is that after being on the smoker for 2 hrs. at 225 then immersing them in a bowl of ice water they somehow sucked that water into the egg and really made a mess of the whites pretty much. I boil eggs all the time and put them straight into cold water and have never had any kind of an issue, this is an inexplicable first.....and last.
John I've cooked potatoes on the smoker but I've not done the sweet potatoes. I'm going to do that as DW loves sweet potatoes, and like you, I'm not sure what a "complex" flavor is, it either tastes good or it doesn't.

Danny, reading that reminds me of Jesco White, "The Dancing Outlaw". He threatened to cut his wife's neck if she fixed any more of those "runny eggs". If you've never seen the 1/2 hr. documentry "Dancing Outlaw" I highly recommend it.

Quite sure. I was smoking THE eggs (edible) not smoking IN the egg. Did I mention somewhere "don't"?

We smoke eggs all the time. With 7 chickens laying we get a ton of eggs every day and look for creative ideas. Fresh eggs on the rack, smoker at 225°, leave in undisturbed for two hours, cool to room temp, peel and eat or make deviled eggs, or egg salad sandwiches, etc. We use a Masterbuilt smoker, powered by LP gas, a full water pan, and good quality wood chips soaked for an hour or so. I only smoke eggs at the start of the smoke so the heavy initial smoke really penetrates the shells and you get good smoky flavor. Eggs taste best with a mild wood like apple, cherry or alder

Do you put the eggs in a cold water bath to stop the cooking? Most commentaries I saw suggested the cold bath as I do with normal boiled eggs so I did. It seemed to me that dropping the hot, dry eggs into the bath may have compromised the texture of the egg. Thoughts? There was no "smoky" flavor with them either - used oak as that is what was in the smoker.

I do not do a cold bath. Two hours in the smoker, take them out and let them come to room temperature on their own.

I have a Master built 2 door LP smoker. I think the water pan helps with keeping the meat moist. One of my favorite wood chips are the ones that come from the Jack Daniels whisky barrels. My DW makes a great dry rub for ribs and combined with the JD wood chips it's heaven.

How big is your pellet smoker? I love to smoke things, but my smoker is to big to travel with.

I carry a Green Mountain Grill Davy Crockett. It folds up and it goes in a travel bag that I put in the pass through - works great. I use it to smoke, bbq, sear etc. and it has really opened a LOT of opportunities to vary what I cook and cook what I like as if I was at home. I do however think they have changed the Davy Crockett and it no longer has the foldable legs that make a carrying handle. They changed the name as well, Trek I believe. They smoke great and GMG has great customer service as well.

Another method I have seen is to cook and peel the eggs first and then smoke them @ 225 for about 30 minutes. One time I boiled the eggs and then after cooling cracked the shell all around the egg and then as above. It gave an interesting spider web pattern all over the egg. I like to experiment with my smoker.

The Davy Crockett looks interesting. I like the bluetooth idea as long as you can still use it without it. I had a full size smoker once that you couldn't use without the bluetooth connection.
Does anyone have the AS350 smoker? I was wondering if the features it has is worth the extra $150 over the AS300?
Does anyone else have recommendations and why? I am really getting into this now.
I don't think I will be smoking any eggs. Stuffed sausage is my favorite though.
