Am I bypassing HW tank correctly?

I have a 2019 Bullet 248RKS. The hot water tank hoses look like there is only one manual valve on the inlet and maybe a check valve on the connector on the outlet hose. Is there only one valve to turn?

I turned the valve, emptied the tank and left the drain plug out, turned on the pump and no more water drained out. I suppose this is evidence that I did it correctly.

My previous Jayco has three valves to turn!

That is correct. Most all newer RVs have the single valve with check valve.

Yup.

Going from a trailer with 2, I searched for the second one for a while when I first winterized. Since my HW is buried in the back corner under the stove, I bruised myself searching.

You have 1 valve.
