I use it when flushing my black tank with one of the clear sewer adapters with valve. I know my tank will hold 42 gallons, usually put in 35 gallons per flush, repeat until it runs clear.

I use the same one. On a previous 5er I had to remove the fresh water tank to fix a squeaky floor. Since I had it out I thought I'd fill it using my water meter.
It held exactly the 54 gals thats stated for the 5er specs. Filled right to the top.
I also checked it with a 5 gal bucket. It's amazingly accurate.
Where I find it useful is when filling and only needing say 20 gals for travel. Not knowing the PSI coming out of the spigot I can use the water meter to take the guess work out.
My idiot lights on the panel actually show the fresh tank full when I can still add 20 more gals. Having the water meter allows me to fill the fresh tank and know exactly how much I have in it.
