Tire options change when the max psi is moved to 80 vs 110. I'm sure you will get varying opinions but I would suggest either Carlisle Radial Trail HD or Goodyear Endurance. I've owned the Carlisle tires with excellent results and base the Goodyear recommendation on the positive responses from owner on this and other forums. Discount Tire has the Carlisle for 161 and the Endurance for 179.

So I am only able to add tires in the Rated E Range with a rim that can only hold 80 PSI Max?

E rated tires require 80 psi to support their maximum rated weight bearing capacity. A tire with a higher rating will require a higher psi to do the same. It's the air inside the tire that supports the weight, not the tire itself. So while you may be able a higher load rated tire it would be of no value as you can only air it up to an E load rating.

Ok, so what is everyone's take on installing LT tires Rated E Load a 5th wheel? I have read people recommend and others dont.

Why? An LT tire will likely be E rated & 80 psi so what would the the benefit?
Personally a truck tire (LT = light truck) goes on a truck, a trailer tire goes on a trailer, there are reasons for making them that way, our resident tire pros would be better at pointing out the differences than I.
