removing cooktop for sink?

After reading a post just now on outdoor kitchens, I remembered I hate the outdoor cooktop on the Avalanche. I want to reuse the flip down piece and just slide in a plastic sink of some sort into the opening. My question is should I make this simple and use the outdoor shower faucet to supply water with removeable connections and a 5 gallon bucket to catch the grey water OR plumb it through the underbelly off the rear bathroom sink feeds... One way obviously is more work but I enjoy that fight. Thoughts?

If you have the tools and expertise to plumb it in, I would do it that way. You won't like having to look at a bucket collecting water when you could have done a professional looking job.
