Generally one night stops we do not unhook. If stopping for more than one night we do. But thing are fluid so we plan accordingly.

I generally stay hooked up if possible.
I carry various length 2x6's with a 45* bevel on one end and can stack them 3 high to get reasonably level.
I also travel with my fresh water tank full so all I have to connect at the campsite is the power cord.
I'll fuel up shortly before stopping for the evening, so I don't have to stop right after getting on the road in the morning.
One key tidbit, I try to get a pull through site for my overnight stops.

I have done both and found not a big difference. If I have plenty of fuel and only going to sleep n leave in the morning no breakfast or anything then will stay hitched as long as ground is level. If the plan is to get up cook a meal then I will unhook. If I unhook I will go n fill up the truck. Try and always start with a full tank. Easier to get fuel without camper and the extra 10 minutes to hook back up isn’t a problem.
