AC fan speed question

This may be a ignorant question.

Just finished a two week trip thru AZ, Tx, NM finished at the Grand Canyon. Most days were high 90s or over 100. I noticed at the Grand Canyon the my front AC was dropping fan speed. I changed fan speed at thermostat from Auto to High but no change. Since it was late afternoon I just turned it off because outside temps were dropping.

Next day when I turned it back on (and set at auto) it fired up at full speed. Will the ACs slow fan speed if they are over worked ?

My Dometic in Auto fan control runs the fan in high speed until the actual temperature gets within I think 4 degrees of the setpoint then it will shift to low speed.
