Adding a wall thermostat to my A/C

I have a non-ducted Dometic 13,500 BTU A/C with the thermostat built right into the unit. The problem is that when turned on, the blower is always on even when the compressor is off. I would like to be able to leave the camper on-site with the A/C on but not have the fan running all the time. Any way do this short of replacing the whole unit?

If I remember right, about a year and a half ago at a previous employer we tried to use a plenum control AC unit with a thermostat, and couldn’t get the wiring right.
