Cheap leather

I am sure it’s been asked before but I can’t find the answer. Is the only answer to fix my couch to buy a new one? The covers look simple to remove and one would think that they would be readily available since it seems to be a common issue. I can not see myself spending $750-$1,200 on a new one only to have it peel a year later.

First, the couch very very likely is a "Thomas Payne" or tommy pain... the material is pleather and not leather and they shed like crazy as you noted. Buy a good piece of residential furniture (we have a LazyBoy love seat double recliner) that the back comes out of the frame. Take your old couch and pull the back out and take it out of your camper and donate it to the junk yard. I bought my LazyBoy on Craigslist for $150 but folks with bigger budgets can go new.

Look for an upholstery shop. They can recover your existing couch in whatever material you want. It will probably be more than the price of a new couch, but it will last a long time.
