My Outback had the same outdoor kitchen and I've wondered about the utility of the sink. Also the stove, with the wind deflectors in place, only allowed room for a small pot, not very useful for food preparation. i took the whole thing out and sold it to a guy on Craigslist yesterday. The compartment is the exact size needed to store a Camp Chef Weekender stove(two 30,000 BTU burners). The stove has it's own legs and the drop down door to the compartment makes a perfect work surface. I can now fry fish, bacon, or anything else without smelling up the trailer.
The water lines feeding the outside faucet were attached to a "T" under the kitchen counter, so caps were all that were needed to close the line with no major plumbing involved.
I won't miss the sink. If I need to wash my hands, I'm right by the back door.
