The Vantage line was only produced for a couple of years. It was intended to be a "low cost alternative to the Airstream line, but didn't appeal to buyers like Keystone expected and it was discontinued. The floor is a laminated luan/styrofoam/luan construction with an internal welded aluminum joist support system. Once it gets wet, it usually softens and can't be easily repaired, only replaced. Your description of the "soft spot between the dinette and the galley is probably from a leak in the shower area. It may be fairly easy to replace, or it may present challenges that could be difficult to overcome.
The exterior is FILON laminated sidewalls and fiberglass "color blended gelcoat finish" that is poured into the mold before the fiberglass is sprayed on the mold.
Once it oxidizes, it's difficult to return a "like new surface". You might discuss how to best restore it with someone well versed in painting/restoring fiberglass boats. Most marina service departments would know who your "local area experts" are... Check with them, maybe not to actually do the work for you, but to get some ideas from them as to how to best proceed with restoring the exterior.
The Vantage is a "classic loo" that doesn't go out of style, like the Airstream it just "looks expensive and luxurious".... For the Vantage, unfortunately, it's mostly "expensive looks with routine parts to achieve the image"....
