In your situation I don't think it's going to make much difference. If you run up to 950 lbs. on the tongue there will be virtually no difference in the ride between the 1000 and 1200 bars.
I run about 1100 on the tongue and use the 1200 bars. Initially the dealer installed 1000 bars and I didn't notice. When I did (when I got home with the trailer) I called them and told them I had said 1200. Had to take it back and get the 1200. No difference in ride whatsoever but the 1000 lb. bars would have been overloaded. I do believe somewhere in there (maybe talking to Progressive who makes the Equalizer) I recall them saying it took a heavier shank for the 1200-1400 lb. bars (14k lb.). It may have been the 14k. shank went on the hitches with 1000 - 1400 lb. bars and not the lighter hitches? Just check to be sure.
Back to ride; it may be that your 1/2 ton might feel a difference more than my HD but I can't tell ANY difference - in fact, I did the same thing on my 1/2 ton (Ram 1500) and had the same result. I think in your case I would go with the 1200 if you think you're going to push that 1000 lb. rating. The 1000 lb. bars would probably suffice if you never go over that limit but I don't think the additional 200 lb. rating is going to make any difference - and give you a little comfort space.
