You could do both. If you know where the valve is, cutting a 3-sided "flap" might be better than cutting out a square. If you cut out a flap, have the uncut or flap part on the front edge of the RV and use Gorilla tape for the remaining 3 edges.
All of the coroplast does not have to be removed. Again, if you know where the valve is, just remove enough screws so that you have reasonable and working access to the valve. If you are ambitious, take a good look around the entire underbelly area and see "what's there" and where other things are such as holding tanks, other valves, etc. Make a map of where and what you find for future reference.
You might find wires that are just loose and not fastened down properly, bits and pieces of insulation scattered or thrown in there, loose connections, etc.
Not an ideal working environment but if your rig is under cover and the weather is ok........ well, a great time to explore the underbelly!!
