You probably have a whole lot of moisture in the air. And, if you don't have a good air filter, you'll have too low an air flow to keep it from icing up.
What is the humidity like, right now? Has it been raining? What kind of filter are you using?

Try setting the thermostat to a point where the AC just barely comes on. Don't try to make a huge temperature differential.
