Wow, yes I would be changing out your faucet that is not normal by any means. I have seen them for around 20-30 bucks so not a major expence, and very easy to change.
I have not heard of the check valve on the HW tank would like to see pictures of that and what the change would do. I don't have any problems with the way things are so..... anyway keep us up to date.

I can't wait to get out camping again
