The thermocoupler keeps the gas flowing. Once you turn the knob to pilot, you push it in bypassing the thermocoupler.

Using a sparker takes the place of using a match or lighter. After the pilot flame is lit it heats the thermocoupler and keeps the valve open. If the flame goes out the thermocoupler cools and shuts off the flow of gas.
