This sounds about as elegant and simple as could be. The parts are available everywhere (no trip to RV dealer needed!) and very easy to install.

I'd remind the OP that these doors are hollow and to make sure you install the screw eye into the solid wood frame. Same for the walls. Find something more solid than the 1/4" luan wall material to place the other eyelet even if you have to use a longer bungee.
