I'm under the assumption that this is "post-winterization" check on your coach, where it sat idle for a few months? If so, were the cabinet doors closed and aligned prior to its hybernating state? If the doors are made from a different material than the wood cabinet framing, expansion of the wood can be possible if humidity levels increase. 1/8 inch is quite a bit though.

Anothet thought, is the trailer jacked up on its frame or by leveling jacks? Excessive torque on the frame can play "not so nicely" with square door frames and cabinetry work.
