Used to live near Fredericksburg, been there many times. Stayed at KOA. It was nice, and there are shady areas, with all the trees, but it is pretty far from town. There are so many "touristy" things to do there, that it can be hard at times to find an RV spot. The last time, the only place we found available was at Quiet Creek RV Park, on the west side of town. It was closer to town, and a nice park. We would stay there again.
Pacific War Museum is one of the best I've been to. Hondo's is great, especially Sunday at noon, where you can enjoy Gospel music while drinking beer and having lunch. The problem with the winery shuttle buses is you don't get much choice of which wineries you can go to. These shuttles work out arrangements with wineries that the shuttle company gets "paid" to bring people there. Find out what the older wineries are; those are usually the best places to go.
If you hope to book an RV site at the last minute, you may have trouble finding a spot. Plan ahead.
