It’s been a while since I’ve dealt with a system like this one, but If you follow the hot lines up, the hot and cold probably run together at some point. That’s a mixer valve. If you position the valves to flow to those lines, you’ll get warm water instead of hot. There is also a water heater bypass position for winterizing on the cold side. You don’t want that bypassed, you need water to get into the water heater. I can’t see in the pic which lines go where, but if you look at the routing, you should be able to figure it out. Again, it’s been awhile since I’ve dealt with lines like this, someone else will probably be able to provide better clarification/guidance.
