I just run the pink stuff and have not had an issue in 25 or so years (and I'm in Canada where it can get a little bit cold).

It's "double insurance" in that water dilutes RV antifreeze and raises the temperature at which it freezes. Removing the water eliminates the dilution and helps protect to a lower temperature (no dilution of the antifreeze)...
You can do it either by removing the water with air or by running the antifreeze into the system long enough to purge the water (wastes some antifreeze).
Either way will work, personal preference for me is to get rid of as much water as I can so I don't waste antifreeze. YMMV
