The problem with any aftermarket gauge is they work off of pressure. Propane, being a captured "gas" in liquid form, is that it will always have the same pressure, give or take a small amount for large temperature swings. That beign said, by the time the "pressure" gauge shows lower, it is empty or darn near empty.

You would need a tank with a float valve installed to get accurate level readings.
