I think it's similar to when you fill your gas tank. As it gets toward the top, you can usually hear it before the gas pump shuts off on its own. Of course if you ignore it and try to keep pumping, it overflows and makes a mess. Same thing with your black tank.
[EDIT] That being said, we usually go by days per dump. Never had problem with three days weekends for two people on a 30 gallon black tank. If we stay some place for a week without full hookup, I will pull up stakes and dump mid-week since we don't have a portable honey wagon.
