As I’m thinking about it I’m fairly convinced you are overloading the 30amp service. The AC is drawing 17 amps, the water heater 12 amps, the fridge maybe 5 amps. That’s over 30 amps. Maybe just run the water heater when you need to take a shower and turn off the AC when the water heater is on. Anyone with more or better information please chime in.

Edit-or you could run the water heater on propane when the air conditioner is on.
