Wow, what a mess! Sorry to hear about your loss. As far as the wiring underneath, what you saw is normal for just about every RV.

Linoleum is laid as a single sheet before walls and fixtures are installed so if your replacing, be ready to do a lot of cutting and trimming. Carpet isn’t nearly as bad to replace. If you suspect damage to the subfloor, then you almost have to remove the covering and inspect. Your looking at quite a task, my hats off to you.
