We are looking to replace bunk mattresses in our camper and wanted to see if anyone has any suggestions. Thanks in advance.

Depending on the width you may want to look into the Exped megamat 10 or 10 duo (or something similar), They are inflatable camping pads so they can serve other uses as well.

Look up rv mattresses online with your measurements, they have some good quality mattresses at reasonable prices. DO NOT go to mattress store, that has got to be the biggest scam, $2-3-4k for a mattress, that's got to be about a 5000% mark up??? Never heard of the inflatables mentioned, but have never had an inflatable that lasted very long before you were sunk to the floor.

You could also seek out a foam supplier online (or local) and buy a reasonably dense foam in the exact size of the bunk that's comfortable to sleep on. Encase it with padding and a breathable fabric and you'd have a very affordable sleeping surface.

I bought this: https://www.amazon.com/gp/product/B00HCZ0XBM/ref=oh_aui_search_detailpage?ie=UTF8&th=1. Although, looks like they aren't carrying it anymore as a Prime item. Probably any foam twin bed you could do this.

Bunks in our 2920BH were slightly smaller than a twin. So I pulled it out of it's "sack" and used an electric carving knife with a board as a straight edge and trimmed it. Put it back in it's "sack" and installed it in the RV. I only trimmed the width, length was close enough to fit without any issues.
