We have a 2015 Montana. I was checking the bathroom faucet, underneath the counter and found one of the bolts was severely corroded. Any ideas on how this could happen or what could cause this.

Moisture. Some how it is getting wet. Most likely the gasket under the faucet housing is out of position or pinched and water is getting to that side.

Or a leak within the faucet itself. I just replaced a home bathroom faucet due to such a leak.

Most likely cheap , water and cleaner seeping into the underside . And not really brass

I'm thinking that your vanity top is getting wet and starting to swell. You just might have to replace it as it'll probably never seal properly again as it won't be perfectly flat anymore.

And with all that corrosion it may be very difficult to get the plastic nut off. Breaking the nut may be the only way to go.
