The last Hideout I was in was a 2013 model. The fresh water tank was under the bed, just forward of the hinge that separates the "lift up under bed storage space" from the rest of the bed platform. If you remove the mattress, you should find about 15 or 20 screws holding that "front piece of OSB" to the bed platform. Remove those screws from both sides and the forward bulkhead (leave the hinge screws in place as they keep both parts of the platform together) and then lift the entire platform off of the bed base.
You'll see the fresh water tank, fill hose and the pickup hose for the water pump located in that compartment.
The fresh water tank is not located under the trailer, but is "inside where it's warm". The black and gray tanks are "semi exposed" under the trailer and may (or may not) be covered with a coroplast liner. On many Hideouts, the tanks and the dump valves are exposed, which means those trailers are, at best, 3 season trailers (with emphasis on late spring, summer and early fall) as soon as the temperature starts dropping below freezing, the exposed tank valves and plumbing runs will prohibit dumping the tanks, even if they don't actually freeze. Just having the valves frozen means the tanks no longer function properly....
Anyway, your fresh water tank is probably under that "hidden box cover" in the bed platform.
