As with most pickups, including 1 tons, you rarely exceed the towing capacity before you exceed the payload capacity. That's a marketing trick used by the manufacturers. What does the yellow sticker on your drivers door say for cargo carrying capacity?
If you aren't sure about the numbers for your Canyon, the best way to get some real numbers on your available payload capacity is to take the truck to a CAT scale and weigh it with a full tank of fuel and everyone on board. Since you're looking at a bunkhouse model you must have some kids to take along, too - don't forget they'll be growing. Don't forget to account for an extra 75-100# for the WDH. A actual weigh in will account for any accessories you have installed like a tonneau cover, running boards, etc.
The GVWR less (the actual weight, plus 100#) will tell you what you have left in payload capacity for the Passport's tongue weight and anything you want to put in the truck bed.
You're right to assume about an extra 1000# once the trailer is fully loaded. Assuming the 4730# is the actual UVW on the sticker on the trailer, you're right to figure about 5700#. Use 12% of that (685#) for the anticipated tongue weight.
If you're close on the numbers but you're comfortable with the available power, you can upgrade the Canyon by adding LT tires and better suspension to make the ride more stable, but that will not increase your GVWR.
