Congrats on your new Bullet. I've had one now for three seasons and its created some nice memories for my family.
I hate to "rain on one's parade", especially after such a significant purchase. But, Bob is right. That's a lot of trailer for that Colorado to handle. The GVWR is 7300 lbs for the trailer. The max towing capacity of a 18 Chevy Colorado is approx 7,000 lbs. No margin of reserve unfortunately. The bigger problem that many midsize truck/SUV owners are faced with is payload. It wouldn't surprise me if your truck is rated for much less than 1500 lbs. 15% of 7300 lbs will remove 1100 lbs of that capacity. By removing another 100 lbs for a WDH and the weight of passengers and cargo, you should be able to see that payload is the Achilles heel of the
towing specs.
Lastly, the nearly 30 feet of trailer will be a challenge to control from any Class 1 light duty. That's a big sail at hwy speeds and a monster to stop on mountain descents. Pushing a midsized truck to its limits (and beyond) is not what I would want to do, especially considering how expensive they are nowadays.

Hey, how do you like the bullet? I have a Keystone 2910by , or bigger than yours and a Chevy 1500 could handle it but moved up to a diesel 2500 and trailer goes so much better. You can have too much truck especially if you are hitting grades. Good luck.

Heh. I went off on the towing talk here. Not the right place. Trimmed down to be more appropriate as a new member.
I bought a New Old Stock 2019 257RSSWE in 2020. I love it. I tow it with a Diesel GMC Canyon. I've towed this trailer confidently and without issue for 3 seasons.
My Canyon is 4WD with the 6' 2" bed and most options. Granted, it is as heavy as many 1/2 ton trucks. I also used the Anderson WD system which is incredibly light and wonderfully effective. It tows like a dream. I have towed my trailer with a RAM 3500 Diesel. The Ram got it up the hills faster. Okay, way faster. But that was the only significant difference.
All that said, I've never towed in high-winds.

I just have to say, anyone towing a 7300lb TT with a mid size truck or SUV has a lot more guts than I do.
My best advice would be NEVER tow anywhere with heavy winds!
