I have done tile in mobile homes and it has worked out well. Without actual measurements and just looking at your floor-plan my concern would be clearance to the open doorway. It appears as if even 30" or 32" deep shower pan may not clear the door opening. I don't see any other problems with the change but I am curious how well tile will hold up with the flexing of a trailer. The flooring and wall panels were all installed before the encloser so the only holes are for drain and fixtures. Most 5ers have easy access to the drain from storage area so relocating that should not be a problem. The odd shape of the right-hand wall may complicate things too.
