There are several considerations you'll need to face:
1. The largest 115 VAC "ductless mini-split" is 12K BTU. That's significantly smaller in cooling power than the standard 13.6K or larger 15K BTU rooftop units.
2. Plumbing runs, condensation drains (from the indoor units) and the problem of where to mount the outside unit all pose significant issues with trying to adapt them for RV use.
3. None of the mini-split units are approved for RV use, so warranty and factory support may be difficult.
4. If you've ever sat on the "inside part of an outside wall" where a mini-split was mounted to the wall, there is a "significant drone" that becomes impossible to ignore after about 5 minutes. I'm NOT talking about an A/C mounted to a brick wall, but to a wood framed wall with vinyl siding. As loud as it was, I'd be very concerned with mounting one to the outside of an RV with the "semi-solid foam wall that's only 2" thick.
5. Cost for a "decent mini-split" is in the $1000 range and requires "professional installation/servicing" to charge the freon. It's not a "drop in through the hole in the roof" installation of an RV air conditioner.
So, while it may be "just the ticket for you"... Consider the issues before making a decision.
