Smoked Mac-N-Cheese
I like to bring the ole Weber charcoal smoker with us on our camping trips. Smoked Mac-N-Cheese has become a family favorite. This Memorial Day weekend I'll be smoking a pork loin to go with the mac-n-cheese. Here's the recipe if anyone is interested...
2 cups of your favorite macaroni
1/2 stick of butter
3 cups milk
2 cups heavy whipping cream
2 packages shredded cheddar cheese (the ones you see at the grocery store, 8oz I believe)
1 package combination of colby and monterey jack cheese cubes (same as above 8oz I believe) or you can use 8oz of chunk cheese and cube it up yourself. I've used Pepper Jack cheese also to spice it up a bit.
Salt and Pepper
2 to 3 cloves of fresh garlic pressed or minced.
Put the dry macaroni elbows in a pan (somewhere around 9x13 size) - Yes, dry macaroni. You don't need to pre cook.
Melt a stick of butter, and then pour it over the macaroni
Add 1 package of shredded cheddar cheese
Add colby and monterey jack cheese chunks
Add milk
Add heavy whipping cream
Add Garlic
Salt and pepper to taste
Give it a stir (I actually stirred it another time or two during the early cooking process).
Into the smoker at 250 degrees for approximately 1:50 minutes
Spread a layer of shredded cheese on top now (after the 1:50 in the smoker). Let it melt then serve. Delicious!

Talking about Memorial Day food, I had some 1" thick center cut Pork Steaks cut from a butcher shop and they will be going on a grill this weekend. I usually cook them about half way, then let them simmer in my favorite BBQ Sauce for a couple of hours. The meat will fall off the bone....Yummy!

You say you use a charcoal smoker - i'm assuming hardwood lump charcoal. What type? Hickory, Apple, Mesquite, Pecan?

I just happen to have the smoker in the toyhauler and will be cutting the recipe in half and trying it. We'll report back on the results. Probably do a small tenderloin along with it.

Standard Kingsford Charcoal. I generally use Apple, Cherry, or Pecan with smoking Pork & Mac-N-Cheese. Depends on what I have handy.

Smoked Mac-N-Cheese Update
You asked for it so here you go. Pictures of the fabulous meal...
Prepped and ready for the smoker.
The Weber doing it's thing with some Cherry wood.
After about 45 minutes. Time for a stir.
10 minutes left till done. Time to add a layer of shredded cheese.
Ready to serve!
Cutting up the smoked pork loins. They were resting while I smoked the mac-n-cheese.
The crew!
Leftovers? Not much!
