Potatos a hit

My family raved over the PoBoy (as my dad called them) potatos that I made on our first camping trip. I just peeled, sliced randomly but all about the same thickness, chopped onion, and a little vegetable oil in a skillet and browned 'em up soft-like with salt and pepper at the end. Served with baked beans and burgers. They were really good and reminded me of my childhood. The grandsons had never had them and loved them that way. They were used to chips or french fries with their burgers.
