Welcome to the forum and the experienced folks on here may echo my thoughts on this.
By your description I gather you are not experienced in this hobby. Fixing and maintaining a trailer is a learn as you go experience. No blueprints, no schematics and no factory support for anything past warranty.
That said, there is plenty of good advice on here. The first piece of it will be to cover the trailer with something to keep any more water from getting in. You probably have bad ceiling panels if the roof has enough damage to sag. I would start by removing ceiling panels and working from there according to what you find. You are taking on a major project that will probably need to be brought to an indoor spot with a high ceiling so you can replace the needed roof parts and put sheathing and a roof membrane on.
