Questions about Mountaineer

I am anticipating the purchase of a Mountaineer 345 bunk house or Montana 3402. I am a photographer and must have desk space (more than the 3402 hopefully). I am wondering about removing a rear sofa from the Mountaineer 345 and putting in a desk. Leaving the fold down bunk is OK. Anyone with any experience or advice on this? Also, I really prefer the Lippert 6 pt leveling system instead of the 4 pt electric system currently offered on the Mountaineer. Is that possible from factory?
