Don't overthink this. It's not really that complicated.
First, if you don't have a generator that requires a battery start, then having a single, dedicated battery for that purpose alone doesn't make much sense. If it does, then use the pull cord to avoid having another dedicated battery.
Second, if you do dry camp a lot (and you said you do) then 2 6v batteries is definitely the way to go. They do weigh more but the difference between 2 12v's isn't that much.
The 6 v are easy to wire --- hook them up in series. Check out Google for how to wire/hookup 6v batteries.
You cannot replace a single 6v battery should it fail, with a 12 volt battery. If one of the 6v fails, then you need to disconnect them and replace the 2 6v with 1 12v. You can't interchange 6v and 12v batteries.
I think 2 6v batteries would be enough for several days of dry camping IF you are prudent with the use of lights, pump and other battery draining items. We use a solar panel (85w) to charge and replenish our 6v's or you can use the generator to either charge up your batteries or use it as a power source for things in your RV.
Earlier, I indicated that Trojans would be my choice but shop around. Cheaper isn't always better. Get a good quality battery --- you'll not regret it. Your boon docking camping enjoyment heavily depends on having fully-charged and dependable batteries!
Replacing your incandescent bulbs with LED lights is a tremendous saving on your batteries. You will be looking at 1/10 of the draw. A must for dry campers!
